Ingredients for the Chilli:
- 1 Onion
- 1 Red Pepper
- 1 Can of Red Kidney Beans
- 1 Can of Diced Tomatoes
- 1/2 Cup of Tomato Puree
- 2 Cups of Vegetable Stock
- 2 Garlic Cloves
- 1 Tsp Mild Chilli Powder
- 1 Tsp Turmeric
- 1 Tsp Paprika
Recipe for the Chilli:
- Cut up the onion and pepper and dice the garlic.
- Sauté the onion and pepper in a large non stick pan for 7 minutes.
- Add the Garlic and fry for a further minute.
- Add in the stock, tin tomatoes and tomato puree, mix in and leave for 2 minutes.
- Drain the kidney beans and add them to the pan and mix in.
- Turn down heat, cover with the lid and leave to simmer for 10 minutes.
